We're trying to make it this year. I don't know if my car can make the trip from NJ to Vegas, so we're currently exploring other options (bus, train, anything not an airplane (too expensive))

Have you checked Orbitz, or Vegas.com both of them have far cheaper flight and Hotel pakages then other places... though it will still be around 460 or so EACH if you share a room, flying from Newark that includes taxes but not bag check fees or the shuttle to the Hotel.
