Is there any way to make my pet stay passive through zoning etc?

Unless there is a custom UI to do it, I'm not aware of it.
I'm just in the habit of hitting the back-off button to put it into passive every time I zone with a group.  Doesn't seem like much of an issue to me..

Just press Pet Back Off and you'll be fine.

Well... I just realized she's on PvP.  I don't play PvP so I wouldn't know... does this make a difference?

I belive it makes a pretty big difference. When a necro is attacked with his pet and it defends, it will draw him into combat, like it or not, so now he can not use the griffons. Also for defending if they zone to get away they get the no zone timer.

When the pet is attacked, even in passive, it pulls the player in to attack mode.

I play on a PvP server as well, and if you don't keep your pet in passive then your a pretty crappy Necro. The fact that you have to do it every single time you zone can be annoying enough, but if you've ever had to zone after someone in a chase and then had your pet lock you on the other side only to find that there were people waiting for you it's down right upsetting. This would be a fix that I could get behind. Not something to fill thread after thread about or that will ruin our class left unchanged, but it would be a ton less annoying if they did fix it.
