I have a Ratonga enchanter I had planned to betray to become an Illusionist. If he is forced to be a Coercer is this even still possible?

Yes, you'll just be a coercer until you actually finish the betrayal quest, then your coercer spells will turn into the parallell version of illusionist spells.
