Agree with OP.Random quest updates just plain sucks, even more with a 'broken' random generator. Make it a fixed number to kill/collect, then people can at least see a progress, but killing 10-20...

Sometimes I really don't understand the devs. There has been actually some very good reasons to NOT remove the crafting instances in Qeynos and Freeport, but they refused to make crafting instances...

You can do that allready, just talk again to the teacher (not sure the tinkerer or the transmuter) to forget the tinkering skill. But you will have to level transmuting and start with skill 1.
