I personally prefer to play the game with no mounts ever visible. This is mainly due to the clutter that occurs when in raids. Makes it too hard to see what I need to see. However, in raids, I still have to see the mounts of players using flying, gliding, and jumping mounts. The option does not turn off their mounts. When combat starts, their mounts continue to clutter up my screen.

I understand that in the open world, where flying, jumping, and gliding are allowed, that it would look visually unappealing to have a player on one of those mounts appear to be superman, flying or running through the air, if those mounts were not visible. But I don't want to see those mounts during combat or in raids.

Furthermore, if instead of "always hide mounts" I use the option "hide mounts only in combat", then even the flying mounts are not displayed when I enter combat. Clutter gone. But I don't want to always use "hide mounts only in combat" because really I don't care to see the mounts at all, even out of combat.

So I have 3 suggestions. Any of these would be fine, but I prefer option 1.

For the option "always hide mounts", make it so that mounts that are not actively flying, gliding, or jumping are still not visible. The mount can pop into appearance when they do such an activity only.

In Raid Zones, where flying, gliding, and jumping mounts are disabled from being able to fly, glide, or jump already, make it so that "always hide mounts" will hide even those mounts. (Similar to what happens to your mount when you zone into a guild hall.)

For the option "always hide mounts", make it so at least those mounts are hidden in combat, even if I am being forced to see those mounts when not in combat. Not fair that I can't select both "always hide mounts" AND "hide mounts only in combat"!
