Hello

Don't worry my wife also berates me constantly about my lack of 'finding skills'

If you press L it brings up the screen where the AA slider lives.

It defaults to 0%, and at this setting you will still gain AA xp from certain things(killing named mobs, discos etc)

By increasing the slider, this channels some of your adventure xp into AA instead and will help you to gain AA quicker, but of course slows down your adventure level gain too.

As for where to set it? Well thats down to choice - Lots of people like to blast through the levels, get to cap and then worry about the AA's

I'm the opposite, and spend most of my time with the bar at 100%. This essentially 'locks' your adventure level as all experience is spent on AA instead. The benefit of doing this is that you can create an incredibly powerful character for their level. I play on the pvp server so this is pretty much essential over there. The difference between a 30 something with 20 AA and the same toon with 160AA is immense, not just for pvp either - I can solo ^^^ heroics several levels higher than me no problem

Its all down to playstyle in the end, whatever suits you best

As far as skills go, it's now:

Apprentice are automatically gained as you level.

Journeyman are (non rare-item) player made.

Adept are mob drops (and rarely quest rewards)

Expert are (rare-item) player made.

Master are mob drops.

Grandmaster are character development choices. (far left tab on the same screen that had your AA slider)

Don't forget to use the research assistant also...if you're looking for App I, II, III...that's likely a new feature for you.

Hit 'k' and look for a button on the top right that says Research. Depending on level and tier, you can upgrade skills in anywhere from hours to 30 days.
