I suppose that the two professions that would help me the most would be tailor for my own MC armor or sage for my own spell upgrades. Which helps a magic-user the most? Spell upgrades? or MC armor? I'm on a PvP server so I need to keep myself somewhat competitive with gear.

As a tailor you pretty much have to keep your tradeskill level 10 levels higher than your adventure level in order to make the best armor for yourself for that tier. As a sage you can level simultaneously since sages get spells for each adventure level at the same tradeskill level. Sages are also ALOT easier to level than tailors. I've also found that mastercrafted tailored armor (at least on my server) is relatively inexpensive in lower tiers.
My advice check the broker on prices, what i noticed was that i was spending a bunch on spells as the levels went up so having a sage was a huge savings to me, versus the gear i just bought every 10 levels. The cost of the gear was about the same as or just a bit more the appropriate rare (of course there were exceptions but it seemed generally true). So that being said I made an alt be a sage, and i went with provisioner on this char. Since you mentioned PvP having AD3's will really be what you need and having the ability to make your own will mostlikely be a big savings.
