Am i correct in thinking that betraying a dwarf over to SK is the best choice?

You can run as any class.  They say that some classes are for certain rolls but that only realy helps at low levels.  As a SK you wont see the need for int at low levels as a lot of our stuff is CA based.

Any race works, unless you're spiffy and want to roll an ugly race like Dwarf/Ogre for 3% HP which will be nothing in the long run.

You might want to hold off till the RoK racial trait revamp is official.... apparently there are some fairly large changes on the way.

The racial trait revamps will work in such a way that any race can choose any trait. Only one will be exclusive to each race. i.e Dark Elf can pick 3% HP, as far as I understand it.
