lets say im a bruiser (evil).. and betray to a good city.. does that make me a monk?

I believe it does, yes.  Same for the other professions - they're converted to their sister profession.

Although to be honest you really should be about 10 or so, considering what you will have to kill inorder to raise your faction with whatever new city you want.
