Does it make more sence to equip a piercing and a slashing weapon as opposed to 2 of the same? There are higher stats on the Pristine Imbued Cobalt Stiletto than the Pristine Imbued Cobalt Tomahawk, but I was wondering if was better to have 2 types of attacks in case a mob/pvp had a higher resist to one of the styles.

I always used the best weapons I had regardless of whether they are slash or pierce. If I was using two pierce weapons, I would switch one with a slash (usually some cheesy treasured weapon) long enough to max my slash out then switch back. But if you use one of each, you dont have to worry about managing your stats too much. It's really a choice thing.

I always equipped one of each in order to max out the skill(piercing or slashing) for that current level. Another thing, I made sure each weapon had the best stat boosts and/or proc combo. After I maxed out my dual-wielding it pretty much depended on my mood that day as to what I would choose. But if you know ahead of time that a mob or mobs in the area you'll be hunting in are resistant to one or the other, by all means equip both hands with what works.

Since I am working both of the STR & AGI trees, I always use a short sword as a primary weapon. But normally I carry both a slashing and piercing weapon. In that way I can do both damage types and also have both the skill slow max out. When I am soloing stuff; I normally get off a couple of arrow combos for large damage before the mob(s) get on me. Once they get that close it is all hand-to-hand and that is when the weapons come into play. If you are going to use the weapon I would find/use the best one you have for the boots/procs/spell affects. I have found that this does make a huge difference in the damage and your effectiveness in killing the mobs.
